Quick & Tasty Pulled Chicken Tacos

I'm always on the lookout for easy weeknight meals that taste delicious and make us feel great. I love batch cooking and always try to have some sort of a plan for the week to prevent too many Chipotle nights (no offense to Chipotle!). Pulled chicken is a regular at my house because it is so easy and can be added to just about anything.
I simply put 1-2 lbs of chicken breasts in the crock pot with some sort of liquid (I used a can of salsa for the chicken on the tacos) and cook on low for 6-8 hours. Its so tender you can shred it with a fork! It can be used for a wide variety of dishes - salads, grain bowls, tacos, burritos, soup, quiche, on its own with a veg - the possibilities are endless.
For these tacos, I used this peach salsa and subbed full-fat plain Greek yogurt for sour cream. I highly recommend trying this substitution if you haven't yet. It tastes exactly the same with fewer calories and fat in addition to extra protein. Win-win!
Ingredients:
pulled chicken - You can make your own or use a rotisserie chicken to save some time
corn tortillas
toppings of choice:
beans
rice or quinoa
sour cream or Greek yogurt
shredded cheese (I used Cotija)
avocado or guacamole
Instruction:
Assemble as desired.
