Pickled Onion, Apple, & Brie Salad

Salad - the ubiquitous healthy food that can be as flavor packed and interesting as you choose to make it. It is one of those dishes that is really easy to get stuck in a rut of spinach, carrots, avocado, vinaigrette - repeat. I was in such a rut recently and decided to combine some new ingredients to add a little punch to our dinner.

Enter the Pickled Onion, Apple, & Brie Salad. It's quick, simple, and so delicious.


Ingredients:

2 heads of romaine, chopped

1 green apple, thinly sliced

1/3 cup brie cheese, cut into cubes

1/3 cup chopped pecans


Cinnamon Vinaigrette

1/2 cup apple cider vinegar

1/2 cup extra virgin olive oil

1 tablespoon honey

2 cloves garlic, minced

pinch of salt

pinch of pepper

1/8 teaspoon cinnamon


Instructions:

1. Add all salad ingredients to a large bowl. Toss to combine.

2. Add all vinaigrette ingredients to a mason jar or other jar with a lid. Shake vigorously to combine.

3. Serve salad with vinaigrette mix in.

4. Enjoy!
