End of summer peach salsa


Looking for a crowd pleaser this week? Look no further. This peach salsa is super easy, healthy, and delicious! Peaches are on their way out of season, so snag the last few at the grocery store. One peach is only 60 calories and gives you 9% of your daily vitamin A and 16% of  Vitamin C.  

I like to pair the salsa with plantain chips, but it's super versatile and can be paired with things like tacos or used as a salad dressing. It's a great alternative to high fat dips like queso. It stays fresh for up to 5 days, but it probably won't last that long!



Ingredients:

  • 1 lb tomatoes (I used 6 medium)

  • 1 bell pepper of your choice (I used yellow)

  • 1 jalapeno (omit or use half if you want to tone down the spice)

  • 1 medium red onion

  • 3 large peaches

  • ¼ cup lime juice

  • ¼ cup red wine vinegar

  • ¼ cup cilantro

  • Salt and pepper to taste

Instructions:

  1. Cut all produce to desired size. I like mine pretty fine but some people prefer a more chunky salsa.

  2. Combine all ingredients in a medium bowl. Gently stir to combine. Cover and let sit at least 1 hour.

  3. Store in the refrigerator.

  4. Enjoy!
